Then, the GEA WESTFALIA separator, with a nominal capacity of 3,000 L/h, separates the cream. At the same time, the RANNIE homogenizer (1,000 L/h) reduces fat globules, thus improving emulsion stability and preventing cream from rising. Fermentation and coagulation After heat treatment, the milk proceeds to fermentation. Here, operators use a double-walled, insulated fermentation tank with a capacity of 1,000 liters and a planetary mixer. This ensures uniform bacterial activity and precise temperature control. At the same time, a 1,000-liter coagulation tank equipped with a planetary mixer initiates the curdling process. Both tanks ensure optimal protein structuring for yogurt, cheese, and fermented cream products. Cheese processing and draining After coagulation, the 2,000 L/h Used Small Dairy Processing Line continues with cheese processing. The system includes a 500-liter tank with a draining sieve and two cheese draining tables. Thus, operators can efficiently handle large volumes of curd. Furthermore, these components simplify whey separation while ensuring sanitary compliance. Furthermore, their design supports easy cleaning and the prevention of cross-contamination. Packaging Operations Once the products are ready for packaging, the line integrates semi-automatic and automatic solutions. First, a semi-automatic filler doses pasteurized milk into 1-liter bags. Next, the yogurt pot filler automatically fills and seals 75 mm and 95 mm cups at up to 1,800 units per hour. Further downstream, a vacuum packaging machine handles portions of cream and cheese. Thermal utilities include a 115-150 kW solid fuel boiler (2014) with a double transfer pump. Meanwhile, an ice water tank (5,000 L, 2014) and a cooling unit (2018) maintain constant temperatures throughout the line. Laboratory and Equipment In addition to the processing units, the 2000 L/h Used Small Dairy Processing Line has a dedicated laboratory. Specifically, it houses analytical instruments for quality control and milk analysis. Additionally, the line includes 300 plastic crates for storing and transporting yogurt pots. System Shutdown and Archiving Finally, operators shut down the line in September 2023. Before dismantling, they cleaned all units and checked their mechanical condition.
